Crock Pot Creamy Steak and Potato Soup

Ingredients
- 1 1/2 lbs beef stew meat or sirloin, cut into thin cubes
- 3 Tbsp cooking oil
- 2 Tbsp butter
- 1 sweet yellow onion, diced
- 4 small russet potatoes, diced
- 2 Tbsp flour
- 1 tsp dried thyme
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp pepper
- 8 cups water
- 2 cups Beef Barley Soup Starter mix (SKU 428029)
- 1 cup heavy cream
- 1 cup white cheddar cheese, shredded
Instructions
- In a large skillet set over medium high heat, add the cooking oil and butter. Add beef, onion and potatoes and brown on all sides. You do not need to cook through.
- Add flour and seasonings to coat meat and vegetables. Cook for 1 minute.
- In a large crock pot, add water and Beef Barley Soup Starter. Mix thoroughly to dissolve. Add in browned beef mixture and mix to incorporate.
- Turn on crock pot to high heat and cook, covered, for 4 hours or until beef and potatoes are tender.
- Lastly, stir in heavy cream and shredded cheese and mix. Cook an additional 30 to 40 minutes. Serve with crusty bread or biscuits. Simple & Delicious
