Texas Caviar

Texas Caviar is a delicious, light, bean salad with marinated veggies. It's an easy chop-and-toss side that feeds a crowd and is full of Tex-Mex flavors.

Ingredients
  • 1-15oz can black beans, drained
  • 1-15oz can black-eyed peas or pinto beans, drained
  • 2-15oz cans white, shoepeg corn, drained
  • 2 cups tomatoes, diced
  • 1 red bell pepper, diced
  • ½ red onion, chopped
  • ½ bunch of cilantro, chopped
  • 2 avocados, peeled and diced
  • 2 green onions, chopped
  • DRESSING INGREDIENTS:
  • ⅓ cup olive oil
  • 2 Tbsp fresh lime juice
  • 2 Tbsp red wine vinegar
  • 1-2 Tbsp of THE MARKET CUPBOARD Cowboy Dust Shaker 8/9oz (SKU 109107)
  • 1 tsp kosher salt
  • 2 tsp granulated garlic
  • ½ tsp black pepper
  • 1 tsp granulated sugar
  • 1-2 tsp ground cumin
Instructions
  1. In a small bowl, whisk together olive oil, lime juice and vinegar. Add dry seasonings and whisk until well blended. Set aside.
  2. In a large bowl, combine the black beans, black-eyed peas or pinto beans, corn, tomatoes, bell pepper, red onion, cilantro, avocado, and green onion.
  3. Pour dressing over the bean mixture and gently toss to thoroughly combine. Taste and adjust salt and lime juice as needed.
  4. Serve with tortilla chips or tacos, or as a great side for BBQ grilled meats!
