Texas Caviar

Texas Caviar is a delicious, light, bean salad with marinated veggies. It's an easy chop-and-toss side that feeds a crowd and is full of Tex-Mex flavors.

Ingredients
- 1-15oz can black beans, drained
- 1-15oz can black-eyed peas or pinto beans, drained
- 2-15oz cans white, shoepeg corn, drained
- 2 cups tomatoes, diced
- 1 red bell pepper, diced
- ½ red onion, chopped
- ½ bunch of cilantro, chopped
- 2 avocados, peeled and diced
- 2 green onions, chopped
- DRESSING INGREDIENTS:
- ⅓ cup olive oil
- 2 Tbsp fresh lime juice
- 2 Tbsp red wine vinegar
- 1-2 Tbsp of THE MARKET CUPBOARD Cowboy Dust Shaker 8/9oz (SKU 109107)
- 1 tsp kosher salt
- 2 tsp granulated garlic
- ½ tsp black pepper
- 1 tsp granulated sugar
- 1-2 tsp ground cumin
Instructions
- In a small bowl, whisk together olive oil, lime juice and vinegar. Add dry seasonings and whisk until well blended. Set aside.
- In a large bowl, combine the black beans, black-eyed peas or pinto beans, corn, tomatoes, bell pepper, red onion, cilantro, avocado, and green onion.
- Pour dressing over the bean mixture and gently toss to thoroughly combine. Taste and adjust salt and lime juice as needed.
- Serve with tortilla chips or tacos, or as a great side for BBQ grilled meats!
