Roasted Cauliflower with Curry and Golden Raisins.

This powder is used widely in savory dishes in Indian and Southeast Asian cuisine. This Curried Cauliflower recipe is a great side for chicken or steak, but it can stand on its own as a meatless meal. Vegetable sides don’t have to be boring or bland. Roasting cauliflower brings out its sweetness while the curry gives it a little kick and a lot of flavor.
Ingredients
- 1 head cauliflower, broken into small pieces
- 1 1/2 Tbs. curry powder
- 1 tsp ground ginger
- 2 Tbs honey, or to taste
- 1 tsp garlic powder
- 1/4 cup canola oil
- 2 tsp salt
- 1/2 tsp black pepper
- 1/4 cup golden raisins
Instructions
- Preheat oven to 400°F. Line a baking sheet with parchment paper.
- In a large bowl, combine all ingredients except the raisins. Toss everything well to combine and evenly coat the cauliflower.
- Roast for 30 minutes, rotating tray and flipping cauliflower halfway through.
- When cauliflower is tender, remove from oven and sprinkle raisins on top. Cover with foil or parchment to keep warm until ready to serve. For a little color, chop a few chives and scatter on top and add pine nuts for extra delicious crunch.
