Sun Dried Tomato Meatloaf

This meatloaf is bursting with flavor. Basil and sundried tomatoes take this comfort food to a whole new level of delicious!

Ingredients
  • 1 tbsp. oil
  • 1 small onion, diced
  • 1 carrot, slivered
  • 1 lb. lean ground beef
  • 2 eggs
  • 1 tbsp. garlic
  • 1/3 cup Sun Dried Tomato & Basil Dip Mix (SKU 278110)
  • 3 tbsp. grated parmesan cheese
  • ½ cup milk
  • ½ cup breadcrumbs
Instructions
  1. Preheat oven to 350 degrees.
  2. In a sauté pan, Cook onions and carrots in oil over medium-high heat until tender.
  3. In a large bowl, combine all ingredients by hand. Transfer mixture to a greased loaf pan.
  4. Bake 30 -40 minutes or until center is no longer pink. Allow cooked meatloaf to sit for 5 minutes before slicing.
