Salsa Glazed Chicken

This seasoning is a blend of zesty spices and seasonings that will transform your dinner taste into an authentic Mexican meal, adding delicious flavor without a lot of spicy heat. The Salsa glazed chicken is sweet and spicy and super tender - sure to be a summer grilling favorite!

Ingredients
  • 2 lb chicken thighs
  • ---- MARINADE:
  • ½ cup apple cider vinegar
  • ½ cup vegetable oil
  • ¼ cup minced onion
  • 2 Tbs honey
  • 1 Tbs chopped cilantro
  • 1½ Tbs Chili Lime Seasoning
  • ---- SALSA GLAZE:
  • 1-15oz jar salsa
  • ¼ cup brown sugar
  • 2 Tbs apple cider vinegar
  • 1 tsp Chili Lime Seasoning
  • Juice from 1 lime
Instructions
  1. Place chicken thighs in a 9x13 casserole dish and set aside for later.
  2. ---- TO MAKE MARINADE:
  3. In a small mixing bowl, combine vinegar, oil, onion, honey, cilantro and Chili Lime Seasoning.
  4. Whisk until smooth and well blended.
  5. Pour marinade over chicken to coat.
  6. Marinate, covered, for at least 2 hours or overnight in the refrigerator.
  7. ---- WHEN YOU’RE READY TO GRILL:
  8. In a small mixing bowl, make the salsa glaze by combining salsa, brown sugar, vinegar, Chili Lime Seasoning and lime juice.
  9. Whisk until smooth and well blended.
  10. Set aside until chicken is cooked, as follows.
  11. Once grill is hot, add chicken and sear both sides, cooking until internal temperature is at least 165°F. When chicken is done, brush both sides with Salsa Glaze and cook an additional 5 minutes.
  12. Serving suggestion: serve with yellow rice and corn on the cob.
