Mashed Potato & Ham Bake

Featuring Market Cupboard® Sour Cream & Onion Mashed Potatoes This is a delicious way to use mashed potatoes and leftover ham! This dish is the perfect meal for just about any occasion. This casserole has creamy mashed potatoes baked with ham, onions and breadcrumbs. Yes, please!

Ingredients
  • 3 cups water
  • 6 Tbs butter
  • 1 cup milk
  • 4 cups Sour Cream & Onion Instant Mashed Potatoes
  • 2 Tbs butter
  • 2 onions, cut into strips
  • 1 Tbs paprika
  • 1 tsp Italian seasoning
  • pinch of salt and pepper
  • 2 lbs ham, cut into large chunks
  • 2 cups Panko breadcrumbs
Instructions
  1. Add water and butter to a medium saucepan and bring to a boil. Remove from heat and stir in milk and Sour Cream & Onion Mashed Potato mix. Whisk briskly for about 1 minute, until texture is smooth and silky.
  2. Sauté onions in butter with seasonings in a small pan until tender and caramelized.
  3. Mix together prepared mashed potatoes and diced ham.
  4. Spread potato mixture in a spayed casserole dish.
  5. Top with caramelized onions and Panko breadcrumbs
  6. Bake at 350°F for 30-35 minutes - Simple and Delicious!
