Cheesy Broccoli and Rice Chicken Casserole

The combination of creamy cheddar cheese and broccoli gives this traditional dish a flavor that is hard to resist! Adding shredded chicken transforms it from a delicious side into a hearty, full-flavored meal. Cheesy comfort food at its best!
Ingredients
- 3 cup water
- 2 cup whole milk
- 3 cups Cheddar Broccoli & Rice blend
- 1/2 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon paprika
- 2 cups shredded cooked chicken
- 1-16 oz. bag frozen broccoli florets
- 2 cups shredded sharp cheddar cheese
- 2 tablespoons butter, melted
- 2/3 cup buttery style crackers, crushed
Instructions
- In a large saucepan, combine rice blend, water and milk, and stir. Carefully bring to a boil, stirring frequently. Bring back to a low simmer for 10 minutes.
- Add pepper, garlic powder, paprika, shredded chicken, broccoli florets and half the shredded cheddar, and fold in all ingredients until combined. Spoon into a greased 2½ quart baking dish.
- Combine melted butter and cracker crumbs. Sprinkle on top of the casserole. Top with remaining 1 cup shredded cheddar cheese. Bake on the middle to lower rack at 350? for 10 minutes or until bubbly and crumbs are golden brown.
