Cajun Meatballs

They make a fabulous appetizer on their own but also pair perfectly with a bowl of sticky white rice for a complete meal. With just a few minutes of prep time, you’ve got a tasty new meatball recipe go-to.
Ingredients
- For Meatballs:
- ½ cup Panko breadcrumbs
- 1/2 cup milk
- 1lb ground beef
- 1lb ground pork sausage
- 1tsp granulated garlic
- 3Tbs soy sauce
- 1 egg
- 1/2 cup scallions
- 1/2 cup chopped parsley
- 2Tbs Louisiana Cajun Seasoning
- For Sauce:
- 1 1/2 cups BBQ sauce
- 1/2 cup apricot preserves
- 3Tbs vinegar
- 2 tsp sesame oil
- 1/4 cup water
Instructions
- Heat oven to 375 degrees F. In a small bowl, mix together panko breadcrumbs and milk. Set aside and let rest for 5 minutes
- In a large bowl, combine ground beef, ground pork, bread crumb mixture, garlic, soy sauce, egg, scallions, parsley and Cajun seasoning. Mix together by hand until all ingredients are well blended. Roll into 1-inch balls; place 1 inch apart on prepared baking sheet.
- Bake 20-25 minutes until meatballs are cooked through.
- Meanwhile, make the sauce: In a medium bowl combine and whisk BBQ sauce, apricot preserves, vinegar, sesame oil and water. Microwave for 2 minutes
- Coat meatballs with sauce and serve with sticky white rice.
