Peanut Butter Energy Bites

Simplistic, no bake oatmeal energy bites boasting delicious peanut butter flavor that tastes just like a cookie! This treat is naturally sweetened with honey mixed with tasty mini chocolate chips to create the perfect wholesome snack!
Total Time: 1 hour 10 minutes
Ingredients
- ½ cup Natural Maple & Brown Sugar Oatmeal 10lb (SKU 576015)
- ½ cup old fashioned rolled oats
- ¼ cup flaxseed meal, rounded
- 3 Tbsp unsweetened shredded coconut
- ⅓ cup miniature semisweet chocolate chips
- 1 Tbsp chia seeds
- ½ tsp cinnamon
- ½ cup creamy peanut butter
- 2 Tbsp honey
- ½ tsp vanilla extract
Instructions
- In a medium sized mixing bowl, combine all dry ingredients and stir to combine. Add the remaining ingredients and stir with a non-stick spatula until thoroughly mixed.
- Roll mixture into 1-inch balls and place on a parchment lined baking sheet.
- Refrigerate until set and chilled, about 1 hour.
